We don't rush a jar. Mangoes are cut at the right hour, salted, and laid out in the Godavari sun. Chilies are pounded on stone. Sesame oil is cold-pressed nearby. Every step is the way our elders taught us — and the way our customers remember from their own grandmother's kitchen.
